BBQ-Themed Cupcakes: Corn on the Cob

You can’t have a proper BBQ without a vegetable of some sort, so to accompany the slider cupcakes I also made these “corn on the cob” decorated cupcakes.

For “Corn on the Cob” Cupcakes, you’ll need:

– Cupcakes (I recommend using a white or yellow cake mix, but any kind will do)
– Yellow cupcake wrappers
– Buttercream frosting, dyed yellow
– Yellow and cream-coloured miniature jelly beans
– Corn holders for decoration

Decorating “corn on the cob” cupcakes:

1.   Bake cupcakes according to recipe directions.  I recommend using yellow cupcake wrappers to bake them in.

2. Mix buttercream frosting according to recipe directions, and add yellow food colouring to turn the frosting to a “corn” appropriate colour.

3. Frost the cooled cupcakes with a generous amount of yellow frosting (just using a spatula or butterknife, as it doesn’t need to be pretty because you’ll be covering it up anyway),  Then immediately arrange yellow and cream coloured miniature jelly beams on the iced cupcakes in lines.

4. Stick corn holders in the sides for added effect, if desired.  I wouldn’t recommend trying to use them to actually eat the cupcakes though, as that could get a bit messy.  Enjoy!
